Buckwheat Pancakes (Gluten and Dairy Free)

Ingredients:

4 eggs

1 can coconut milk

1 /4 cup coconut oil

1 cup brown rice flour

1/2 cup buckwheat flour

1/2 cup tapioca flour

1 tsp baking soda

1 Tbsp baking powder

1/2 tsp xanthan gum (scant)

As it is above, it makes perfect waffle batter. Thin it with a little water to your desired consistency for pancakes. We add chopped apples or bananas or nuts or blueberries...

YUM!
